Pumpkin pie

9" UNBAKED PIE SHELL

8 servings

(per serving: 3.5 tsp. sugar)

Beat, till foamy:

- 3 EGGS

Add, and beat again:

- 3/4 cup BROWN SUGAR
- 1 tsp. CINNAMON
- 1/2 tsp. NUTMEG
- 1/8 tsp. SALT

Mix in:

- 1/2 cup EVAPORATED MILK
- 1 1/2 cup cooked, mashed PUMPKIN

- Pre-heat oven to 425 deg.F.
- Bake pie shell 10 min., then remove from oven.
- Lower the oven temp to between 350 and 375 deg.
- Add filling, then bake another 20 minutes till filling is set.
